How Much Huletts SUGAlite Should I use In An Existing Recipe?Many recipes have been developed using Huletts SUGAlite. However, evenexisting recipes may be converted in three easy steps.
- Omit the sugar and replace with the same quantity of Huletts SUGAlite
- Omit or greatly reduce the fat. (In the case of biscuits and pastry, you can remove up to 2/3 of the fat!)(See below)
- Add Huletts SUGAlite to your dry ingredients and carry out the recipe in the normal way.
Huletts SUGAlite can be added to a dry mix in the same way that you would normally add sugar. If a recipe calls for creaming magarine with sugar, you can do this with Huletts SUGAlite
Huletts SUGAlite for diabetics & slimmers
Huletts SUGAlite offers the following essential characteristics that make it a desirable choice for slimmers and diabetics:
- Low in Fat or Fat Free
It is important to control the consumption of fat when a loss in weight is desired. With diabetics, it is essential to monitor fat content, as diabetes is a major risk factor for heart disease. The recommended fat content is 30% or less of total intake. If obesity and weight loss are the primary issues, a reduction in dietary fat intake is an efficient way to reduce caloric intake and weight.
My formulation is not working, what am I doing wrong?
The formulation has hygroscopic components and Huletts SUGAlite therefore needs to be stored in a cool dry place in a sealed container or bag.
Due to its hygroscopic nature, it requires careful handling in processing and Huletts SUGAlite should always be added to dry ingredients and mixed well first before any liquids are added. If Huletts SUGAlite is being added to egg whites, they should be beaten until stiff and the Huletts SUGAlite carefully folded in. Egg yolks must be placed over a warm water bath and beaten. Huletts SUGAlite must be dissolved by adding carefully and slowly while continually beating yolks. Other emulsifying agents such as lecithin and polyglycerol esters may be used in egg-free recipes.
Huletts Fructose is often used in baking. It is cheaper than Huletts SUGAlite. Why not just use Huletts fructose in place of the sugar?
- Huletts SUGAlite offers a much lower reduction in the GI than Huletts fructose
- Huletts Fructose undergoes a very strong maillard reaction giving you a dark brown product as opposed to the golden brown when using Huletts SUGAlite.
- Huletts Fructose will not be able to offer you a lower calorie reduction than sucrose. Moreover Huletts SUGAlite contains less than half the kilojoules (6.98kJ/g) than Huletts fructose (16 kJ/g).
- When using Huletts fructose you will not be able to replace any fat, whereas Huletts SUGAlite will act as a semi fat replacer, allowing you to remove all/a portion of the fat, thus lowering the kilojoules and making the product safer for diabetics.
- Huletts Fructose is 1.5 times sweeter than sucrose and so one would have to adjust the formulation to get the required sweetness, Huletts SUGAlite has exactly the same sweetness as sucrose and uses a 1:1 substitution.
Huletts SUGAlite and Gelatine?
When using Huletts SUGAlite with gelatine, one might require a foaming or whipping agent such as egg albumen to keep the mix stable and light. In this case Huletts SUGAlite must also be folded slowly into the beaten mixture. Standard domestic applications using gelatine work well.
There are other sweeteners on the market that seem to be much cheaper than Huletts SUGAlite because the dosage is much lower. Why not just use those?
- Yes, it is true that there are many other powdered and liquid sweeteners available that could be used to replace the sweetness of sugar however they will not replace the bulk or functionality of the sugar or fat as effectively as Huletts SUGAlite.
- The products made with these sweeteners will not be truly dietetic as they will have no GI lowering component when compared to Huletts SUGAlite and possibly they will be high in fat.
- Huletts SUGAlite replaces sugar gram for gram, making it easy to substitute, whereas other sweeteners are intensely sweet, and when minute dosages are required, it is difficult to adjust the sweetness balance. You must adjust the volume out with other high GI components such as flour, therefore not allowing a kilojoule reduction and not deeming your product safe for dietetic conumption.
- Huletts SUGAlite offers a reduction in kilojoules whilst acting as a bulking agent as it is not readily metabolised and is fibrous.
- Other sweeteners will not react with the product to cause the maillard reacation for a golden brown colour.
- Finally there will be an aftertaste in the crust of the product made with intense sweeteners. In conclusion Huletts SUGAlite is offering a lot more than these products are in terms of functionality and dietetic status.
Why is the product that I have made with Huletts SUGAlite good, but not quite as appealing as the one made with sugar?
Huletts SUGAlite is a specialised product and whereas it will duplicate the functionality of sugar and provide a good taste, in some cases, it will not be identical to sugar as it is completely different in its chemical make up. Although it can offer a close taste comparison, it will never be exactly the same. It is offering many benefits in a specialised market, where diabetics and slimmers can finally enjoy the taste of baked goods which they normally would avoid. In many cases Huletts SUGAlite can actually improve texture and a difference cannot be detected.
