Banana and Nut Bread
Ingredients2 eggs50 ml oil 120 g (150 ml) Huletts White Sugar 280 g (500 ml) cake flour 2 ml bicarbonate of soda 2 ml salt 15 ml baking powder 125 ml apple juice 250 ml mashed banana (± 4 bananas) 100 g pecan nuts,chopped |

Method
- Preheat oven to 180ºC.
- Beat the eggs and oil, add sugar and beat until well blended.
- Add the sifted dry ingredients alternatively with the apple juice, and mix well.
- Stir in the mashed banana and nuts.
- Spoon mixture into a greased bread pan 26 x 9 x 7 cm and bake for 55-60 minutes or until testing skewer comes out clean.
- Remove from oven and leave to rest in pan for 5 minutes.
- Turn out onto wire rack to cool completely.
Hint: The flavour of banana bread develops over time and the taste is usually the best on the second day. Banana bread and a pot of coffee! There's nothing better...
