Canadian Bacon & Corn Pancake

serves/makes 6

Ingredients

¾ cup milk
2 tablespoons melted butter
1 egg, beaten
½ cup corn
1 cup flour
2 teaspoons baking powder
2 tablespoons Huletts white sugar
½ teaspoon salt
oil
6 slices bacon
maple syrup
1 tablespoon butter
1 Golden Delicious apple, cored, thinly sliced
¼ teaspoon ground cinnamon
⅛ teaspoon ground ginger
2 tablespoons maple syrup

Method

  1. Combine milk, melted butter, and egg in one bowl. Stir in corn and set aside.
  2. Combine flour, baking powder, sugar and salt in separate bowl. Stir well and set aside.
  3. Oil pancake griddle. Place half the bacon slices far apart on griddle and brown on one side.
  4. Pour corn mixture into flour mixture and stir briefly to moisten.
  5. Turn bacon over.
  6. Ladle 2 heaping tablespoons batter over each bacon slice to fully cover. Cook pancakes over medium-high heat until air bubbles form on the top.
  7. Flip pancakes over and cook until nicely browned.
  8. Repeat for rest of the ingredients.
  9. Serve immediately with maple syrup and Sauteed Apples.
For the Sauteed Apples:
  1. Melt butter in medium-sized skillet.
  2. Add apple slices and saute over medium heat 7-8 minutes or until tender and golden.
  3. Add cinnamon, ginger, and maple syrup and heat through.
