Chewy Apricot Bars

Makes 12 bars

Ingredients

500ml(2cups) Self-raising cake flour
10ml (2t) Cinnamon
Pinch of Salt
150ml Bran
150ml Oats
50g Dried Apricots, chopped
350 ml (238 g) SUGAlite
100ml Fat Free Milk


 

Method

  1. Mix the cake flour, cinnamon, salt, bran, oats and dried apricots together in a mixing bowl.
  2. Combine the SUGAlite and milk together. Warm in the microwave until the SUGAlite has dissolved.
  3. Add the SUGAlite and milk mixture to the dry ingredients; mix well.
  4. Press the mixture into a greased lamington cake tin (16cm x 26cm) and bake in a preheated oven at 180ºC for 20-25 minutes or until lightly golden. When still warm cut into squares.
