Chilli and Tomato Jam

Makes ± 1,5 litres

Ingredients

1 kg whole tomatoes, skinned
1 kg Huletts White Sugar
8 small chillies, finely chopped (for a milder jam remove the seeds)
2 packets of spring onion, finely chopped (use the whole spring onion)
juice of 4 lemons


Method

  1. Chop the tomatoes and add to a pot with the sugar, chillies, spring onion and lemon juice.
  2. Stir the mixture over a medium heat until all the sugar has dissolved and only then increase the heat so that the mixture can boil.
  3. Cook for ± 30 minutes stirring the mixture occasionally.
  4. Allow the mixture to cool thoroughly before pouring or spooning into the sterilised jam jar.

Serving suggestion: As an accompaniment to roasts or with cheese.
