Chocolate Swiss Roll
Serves 10Ingredients100 ml Cake Flour5 ml (1 tsp) Baking Powder Pinch of Salt 125 ml (85 g) SUGAlite 30 ml (2 tbsp) Cocoa 3 Extra Large Eggs, separated 5 ml (1 tsp) Lemon Juice 5 ml (1 tsp) Vanilla Essence |

Method
- Sift the cake flour, baking powder, salt, SUGAlite and cocoa together.
- Beat the egg whites and lemon juice until stiff peaks form. Add the vanilla essence to the egg yolks and mix well. Beat the egg yolks and egg whites together.
- Fold the dry ingredients into the eggs and mix well.
- Pour the mixture into a greased and lined Swiss Roll tin and bake in a preheated oven at 200ºC for 8-10 minutes.
- Turn out onto a damp cloth, cut off the edges and spread with diabetic jam recipes (Jams and Preserves or Chocolate Filling recipe)
- Roll up immediately and leave to cool.
- Lightly dust top of Swiss Roll with SUGAlite.
