Teatime Treats

Columbian Coffee Cake

Makes one (double layer) cake

Ingredients

375 ml (1 ½ cups) Cake Flour
15 ml (3 tsp) Baking Powder
5 ml (1 tsp) Salt
15 ml (3 tsp) Instant Coffee Powder
5 ml (1 tsp) Ground Cinnamon
3 Eggs, separated
185 ml ( ¾ cup) Huletts White Sugar
100 ml Oil
100 ml Strong Black Coffee, cooled
5 ml (1 tsp) Vanilla Essence

Method

  1. Sift the dry ingredients together.
  2. Beat the egg yolks and the remaining ingredients together for 3 minutes.
  3. Add the flour mixture and beat until well mixed.
  4. Beat the egg whites until stiff, but not dry, and fold into the mixture.
  5. Divide the mixture evenly between two greased 20 cm diameter round cake pans. Bake at 190°C for 20 minutes, or until the cake springs back when pressed with a finger.
  6. Turn out onto a wire rack to cool completely before icing with a coffee flavoured butter icing.
