Delicious Mocha Mousse

Serves 4

Ingredients

1 Extra Large Egg, separated
1 Extra Large Egg White
1 tin (380 g) Low Fat Evaporated Milk
15 ml (1 tbsp) Cocoa
10 ml (2 tsp) Coffee Granules
15 ml (1 tbsp) Gelatine
50 ml Water
60 ml (41 g) SUGAlite


Method

  1. Beat the egg yolk. Combine it in a saucepan with the evaporated milk, cocoa, and coffee. Mix until smooth.
  2. Warm mixture over a moderate heat; do not bring to the boil. Remove from the heat and cool.
  3. Sprinkle gelatine over the water and allow to set. Heat in the microwave for a few seconds or over hot water.
  4. Stir into the chocolate mixture.
  5. Cool the mixture in the fridge until it begins to set around the edges and is the consistency of thick egg white.
  6. Beat the egg whites until stiff and slowly add the SUGAlite.
  7. Fold into the chocolate mixture. Pour into the serving dish or individual glasses, cover and refrigerate overnight or for 3 hours.
