Festive Fruit Cake
Serves 16 Ingredients100 g Dried Fruit Cake Mix62 ml ( ¼ cup) Brandy 60 g Low Fat Margarine 225 ml (153 g) SUGAlite 1 Extra Large Egg White 2 Extra Large Eggs 375 ml (1 ½ cups) Cake Flour 10 ml (2 tsp) Baking Powder 10 ml (2 tsp) Mixed Spice |

Method
- Soak the fruit mix in the brandy overnight.
- Cream the margarine and SUGAlite together until light and fluffy. Add the eggs one at a time, beating well after each addition. (The mixture may separate on beating; it will rectify itself when the dry ingredients are added.)
- Sift the flour, baking powder and mixed spice into the creamed mixture. Add the fruit and lightly fold the ingredients together.
- Pour the mixture into a greased and lined cake tin and bake in a preheated oven at 150°C for 45–60 minutes or until a skewer comes out clean.
Hint: If the cake starts browning too quickly in the oven, place foil over the cake.
