Festive Fruit Cake

Serves 16

Ingredients

100 g Dried Fruit Cake Mix
62 ml ( ¼ cup) Brandy
60 g Low Fat Margarine
225 ml (153 g) SUGAlite
1 Extra Large Egg White
2 Extra Large Eggs
375 ml (1 ½ cups) Cake Flour
10 ml (2 tsp) Baking Powder
10 ml (2 tsp) Mixed Spice

Method

  1. Soak the fruit mix in the brandy overnight.
  2. Cream the margarine and SUGAlite together until light and fluffy. Add the eggs one at a time, beating well after each addition. (The mixture may separate on beating; it will rectify itself when the dry ingredients are added.)
  3. Sift the flour, baking powder and mixed spice into the creamed mixture. Add the fruit and lightly fold the ingredients together.
  4. Pour the mixture into a greased and lined cake tin and bake in a preheated oven at 150°C for 45–60 minutes or until a skewer comes out clean.

Hint: If the cake starts browning too quickly in the oven, place foil over the cake.

Recommend: ½–1 slice per serving
