Fruity Mince Pies
Makes 24 mince pies IngredientsPastry1 Quantity of Milk Tart Pastry (please refer to our Milk Tart recipe) Filling 125 ml ( ½ cup) Sultanas 2 Large Green Apples, peeled, cored and grated 15 ml (1 tbsp) Chopped Mixed Peel 250 ml (1 cup) Grated Carrot 15 ml (1 tbsp) Mixed Spice 250 ml (170 g) SUGAlite 15 ml (1 tbsp) Brandy |

Method
- Mix the sultanas, apple, mixed peel, grated carrot, mixed spice, SUGAlite and brandy together in a saucepan. Heat gently until moisture is absorbed and fruit is soft.
- Roll out pastry to 3 mm thick and cut into rounds using a cookie cutter. Gently ease into patty tins.
- Place 1–2 tablespoons of fruit mince into each pie case.
- Cut stars out of the remaining pastry using a cookie cutter, brush edges with water and place on top. Press edges together, and bake in a preheated oven at 200°C for 10–15 minutes or until golden.
- Cool and store in an airtight container. Sprinkle with SUGAlite before serving if desired.
