Healthy Living (Low GI)

Golden Scones

Serves 15

Ingredients

375 ml (1 ½ cups) Cake Flour
125 ml ( ½ cup) Oat Bran
15 ml (1 tbsp) Baking Powder
2.5 ml ( ½ tsp) Salt
20 g Low Fat Margarine
1 Extra Large Egg, beaten
125 ml ( ½ cup) Fat Free Milk
30 ml (20 g) SUGAlite
1 Large Apple, grated

Method

  1. Sift all the dry ingredients, except the SUGAlite, together and rub in the margarine. Add the grated apple and mix through.
  2. Beat the egg, milk and SUGAlite together and cut into the dry ingredients, mixing only to moisten.
  3. Roll out 15–20 mm thick, cut with a cookie cutter, place on a lightly greased baking tray and bake at 220°C for 10–12 minutes.

Recommend: 1 scone per serving

Serving Suggestion: Serve with diabetic jam. (See our Apricot Jam or Strawberry Jam recipes.)
