Healthy Living (Low GI)
Golden Scones
Serves 15Ingredients375 ml (1 ½ cups) Cake Flour125 ml ( ½ cup) Oat Bran 15 ml (1 tbsp) Baking Powder 2.5 ml ( ½ tsp) Salt 20 g Low Fat Margarine 1 Extra Large Egg, beaten 125 ml ( ½ cup) Fat Free Milk 30 ml (20 g) SUGAlite 1 Large Apple, grated |

Method
- Sift all the dry ingredients, except the SUGAlite, together and rub in the margarine. Add the grated apple and mix through.
- Beat the egg, milk and SUGAlite together and cut into the dry ingredients, mixing only to moisten.
- Roll out 15–20 mm thick, cut with a cookie cutter, place on a lightly greased baking tray and bake at 220°C for 10–12 minutes.
Recommend: 1 scone per serving
Serving Suggestion: Serve with diabetic jam. (See our Apricot Jam or Strawberry Jam recipes.)
