High Fibre Banana Loaf
Serves 14Ingredients50 g Low Fat Margarine300 ml (204 g) SUGAlite 1 Extra Large Egg, separated 1 Extra Large Egg White 3 Bananas 5 ml (1 tsp) Lemon Juice 300 ml Cake Flour 10 ml (2 tsp) Baking Powder 10 ml (2 tsp) Bicarbonate of Soda 250 ml (1 cup) Bran 125 ml ( ½ cup) Low Fat Buttermilk OR Low Fat Maas |

Method
- Cream the margarine and SUGAlite together, and add the egg yolk and beat well. Beat the egg whites until just stiff and fold into mixture.
- Peel and mash the bananas and add the lemon juice. Combine mashed bananas with creamed margarine mixture.
- Sift the flour, baking powder and bicarbonate of soda together, and then add the bran. Fold the dry ingredients into the banana mixture alternatively with the buttermilk and mix well.
- Pour the mixture into a greased loaf tin and bake in a preheated oven at 180°C for 45–60 minutes, or until a skewer comes out clean.
