High Fibre Banana Loaf

Serves 14

Ingredients

50 g Low Fat Margarine
300 ml (204 g) SUGAlite
1 Extra Large Egg, separated
1 Extra Large Egg White
3 Bananas
5 ml (1 tsp) Lemon Juice
300 ml Cake Flour
10 ml (2 tsp) Baking Powder
10 ml (2 tsp) Bicarbonate of Soda
250 ml (1 cup) Bran
125 ml ( ½ cup) Low Fat Buttermilk OR Low Fat Maas

Method

  1. Cream the margarine and SUGAlite together, and add the egg yolk and beat well. Beat the egg whites until just stiff and fold into mixture.
  2. Peel and mash the bananas and add the lemon juice. Combine mashed bananas with creamed margarine mixture.
  3. Sift the flour, baking powder and bicarbonate of soda together, and then add the bran. Fold the dry ingredients into the banana mixture alternatively with the buttermilk and mix well.
  4. Pour the mixture into a greased loaf tin and bake in a preheated oven at 180°C for 45–60 minutes, or until a skewer comes out clean.
