Thirst quenchers

Mint & Litchi Cooler

Serves 2

Ingredients

1 tin Litchis
15 Large Mint Leaves
15 ml (1 tbsp) Lime Juice
Huletts Icing Sugar, to taste
10 Ice Cubes

Method

  1. Drain 5 litchis from the tin and reserve half a cup of the syrup.
  2. Place the litchis, reserved syrup, mint leaves, lime juice and ice into a blender, and blend until smooth.
  3. Sweeten to taste with icing sugar.
  4. Pour into chilled glasses.
