Moreish Marble Cake
Serves 14 Ingredients40 g Low Fat Margarine375 ml (255 g) SUGAlite 5 ml (1 tsp) Vanilla Essence 1 Extra Large Egg, separated 1 Extra Large Egg White 500 ml (2 cups) Cake Flour 10 ml (2 tsp) Baking Powder Pinch of Salt 166 ml (⅔ cup) Fat Free Milk 30 ml (2 tbsp) Cocoa 30 ml (2 tbsp) Hot Water |

Method
- Cream the margarine and SUGAlite together. Add the vanilla essence and egg yolk and beat well. Beat the egg whites until stiff, but not dry, and fold into the creamed mixture.
- Sift the cake flour, baking powder and salt together. Add the sifted dry ingredients alternately with the milk to the egg mixture. Mix well.
- Divide the mixture in half. Dissolve the cocoa in the hot water and add it to one half of the mixture. Mix well.
- Pour the cocoa mixture into a greased loaf tin alternatively with the plain mixture and lightly swirl together with a fork.
- Bake in a preheated oven at 180°C for 30–35 minutes or until a skewer inserted into the centre of the cake comes out clean.
