Visual Wedding Cake Ideas

For a traditional bride and a modern bride (with a love for fruit cake)

These cakes were made by using a traditional fruit cake recipe and each cake is covered with plastic icing and other decorations.

Boiled Fruit Cake

Makes 2 x 23 cm round cakes

Step 1

Ingredients

1,5 kg dried fruit cake mix
750 g glazed fruit, chopped into pieces
250 g whole red cherries
1 packet citrus peel
250 ml chopped pecan nuts (optional)
350 g butter
2 x 250 ml (2 cups) Huletts SunSweet Brown Sugar
4 x 250 ml (4 cups) water
375 ml brandy
15 ml (3 teaspoons) bicarbonate of soda

Method

  1. Place all ingredients together in a large, heavy-bottomed pot and boil together for 20 minutes over a low heat. Leave to cool.

Step 2

Ingredients

6 x 250 ml (6 cups) flour
15 ml baking powder
10 ml mixed spice
3 eggs, beaten
10 ml vanilla essence

Method

  1. Sift dry ingredients together and add to the cooled fruit mixture.
  2. Add the beaten eggs and essences.
  3. Mix until all the flour is incorporated.
  4. Spoon mixture into prepared cake pans and bake for 3 hours at 150ºC until done.
  5. Leave to cool completely before turning out.
