Ripe Tomato Chutney
Serves 30Ingredients1 kg Tomatoes, peeled and chopped2 Large Onions 1 Large Apple 2 sticks of Celery, chopped 30 g Sultanas 200 ml Brown Vinegar 315 ml (214.2 g) SUGAlite 10 ml (2 tsp) Curry Powder 5 ml (1 tsp) Ground Ginger 5 ml (1 tsp) Dry Mustard 2.5 ml ( ½ tsp) Ground Cinnamon 10 ml (2 tsp) Coarse Cooking Salt |

Method
- Combine the tomatoes, onions, apples, celery, and sultanas in a large saucepan with the vinegar, SUGAlite, spices and salt. Stir consistently over the heat, without boiling the mixture, until the SUGAlite has dissolved.
- Bring to the boil, reduce the heat and leave to simmer uncovered for about 2 hours or until the chutney is thick. Pour into hot, sterilised jars. Seal the jars when the chutney is cold.
