Ripe Tomato Chutney

Serves 30

Ingredients

1 kg Tomatoes, peeled and chopped
2 Large Onions
1 Large Apple
2 sticks of Celery, chopped
30 g Sultanas
200 ml Brown Vinegar
315 ml (214.2 g) SUGAlite
10 ml (2 tsp) Curry Powder
5 ml (1 tsp) Ground Ginger
5 ml (1 tsp) Dry Mustard
2.5 ml ( ½ tsp) Ground Cinnamon
10 ml (2 tsp) Coarse Cooking Salt

Method

  1. Combine the tomatoes, onions, apples, celery, and sultanas in a large saucepan with the vinegar, SUGAlite, spices and salt. Stir consistently over the heat, without boiling the mixture, until the SUGAlite has dissolved.
  2. Bring to the boil, reduce the heat and leave to simmer uncovered for about 2 hours or until the chutney is thick. Pour into hot, sterilised jars. Seal the jars when the chutney is cold.

Recommend: 1 tablespoon per serving
