Saucy Chocolate Mousse


Ingredients

200 g Chocolate
250 ml Cream
2 Egg Whites
60 ml Huletts White Sugar
10 ml (2 tsp) Brandy (optional)

Method

  1. Break the chocolate into pieces and add the cream.
  2. Melt over a low heat.
  3. Whip the egg whites until stiff peaks form, then gradually beat in the sugar.
  4. Fold the egg white mixture into the melted chocolate. Add the brandy, if desired.
  5. Spoon into a serving dish or individual glasses and chill until firm.

Note: If this mousse is made long in advance, the mixture may separate into two layers (a light mousse on top and a rich chocolate sauce below), but is still absolutely decadent.
