Scrumptious Jam Squares

Makes 20 biscuits

Ingredients

75 g Low Fat Margarine
200 ml (136 g) SUGAlite
1 Large Egg
5 ml (1 tsp) Vanilla Essence
500ml (2 cups) Cake Flour
5ml (1tsp) Baking Powder
5ml (1tsp) Cinnamon
Pinch of Salt
250ml (1 cup) Oats
150ml Diabetic Apricot Jam (See Jam Recipe)


Method

  1. Cream the margarine and SUGAlite together until light and fluffy, add the egg and vanilla essence and beat well.
  2. Sift the four, baking powder, cinnamon and salt together, add the oats.
  3. Add the sifted dry ingredients to the creamed margarine, mix well.
  4. Press half the dough into the greased lamington tin (16cm x 26cm), spread the jam over the dough and grate the remaining dough over the jam.
  5. Bake in a preheated oven at 180ºC for 25-35 minutes until lightly browned, when cool cut into squares.
