Scrumptious Jam Squares
Makes 20 biscuitsIngredients75 g Low Fat Margarine200 ml (136 g) SUGAlite 1 Large Egg 5 ml (1 tsp) Vanilla Essence 500ml (2 cups) Cake Flour 5ml (1tsp) Baking Powder 5ml (1tsp) Cinnamon Pinch of Salt 250ml (1 cup) Oats 150ml Diabetic Apricot Jam (See Jam Recipe) | ![]() |
Method
- Cream the margarine and SUGAlite together until light and fluffy, add the egg and vanilla essence and beat well.
- Sift the four, baking powder, cinnamon and salt together, add the oats.
- Add the sifted dry ingredients to the creamed margarine, mix well.
- Press half the dough into the greased lamington tin (16cm x 26cm), spread the jam over the dough and grate the remaining dough over the jam.
- Bake in a preheated oven at 180ºC for 25-35 minutes until lightly browned, when cool cut into squares.
