Spun Sugar



Ingredients

125 ml (½C) SUGAlite
62ml (¼ C) Water


Method

  1. In a small heavy-bottom saucepan place the water and SUGAlite, cover with a lid.
  2. Set over low heat and stirring every now and then with a wooden spoon, allow the SUGAlite to dissolve completely.
  3. Covering the saucepan stops the formation of any sugar crystals on the sides.
  4. Remove the lid, turn the heat up and allow the sugar syrup to boil.
  5. Continue boiling until the syrup turns pale yellow, then golden brown. (Do not leave unattended)
  6. Remove from heat immediately, use two forks to pull threads of the syrup over the handle of a greased wooden spoon that is balanced between two pots.
  7. Spun sugar can be stored in an airtight container for up to a week.
