Spun Sugar

Method
- In a small heavy-bottom saucepan place the water and SUGAlite, cover with a lid.
- Set over low heat and stirring every now and then with a wooden spoon, allow the SUGAlite to dissolve completely.
- Covering the saucepan stops the formation of any sugar crystals on the sides.
- Remove the lid, turn the heat up and allow the sugar syrup to boil.
- Continue boiling until the syrup turns pale yellow, then golden brown. (Do not leave unattended)
- Remove from heat immediately, use two forks to pull threads of the syrup over the handle of a greased wooden spoon that is balanced between two pots.
- Spun sugar can be stored in an airtight container for up to a week.
