Sweet Ginger Bread
Ingredients500 ml (2 cups) Cake Flour10 ml (2 tsp) Ground Ginger 5 ml (1 tsp) Ground Mixed Spice 5 ml (1 tsp) Ground Cinnamon 5 ml (1 tsp) Bicarbonate of Soda 2 ml ( ½ tsp) Salt 125 g ( ½ cup) Margarine 125 ml ( ½ cup) Huletts Golden Syrup 125 ml ( ½ cup) Huletts White Sugar 125 ml ( ½ cup) Boiling Water 1 Egg, beaten |

Method
- Sift the flour, spices, bicarbonate of soda and salt together.
- Mix the margarine, syrup, sugar and boiling water together, stirring to dissolve the sugar.
- Stir the two mixtures together and then add the beaten egg.
- Pour the batter into a greased and lined loaf tin and bake at 180°C for 55 minutes or until a skewer inserted into the centre comes away clean. Place on a wire rack to cool.
