Vanilla Cake with Granadilla Cream Cheese Topping
Ingredients4 eggs300 ml (250 g) Huletts Castor Sugar 500 ml (280 g) flour 15 ml baking powder 250 ml full cream Milk 100 g Clover Butter 5 ml vanilla essence Granadilla Cream Cheese Topping: 125 g smooth cream cheese 100 g Clover Butter 30 ml granadilla pulp 500 ml Huletts Icing Sugar |

Method
- Preheat oven to 180ºC.
- Beat eggs and castor sugar together until thick and creamy.
- Sift the flour and baking powder together and fold into egg and sugar mixture.
- Heat milk and butter, but do not boil.
- Add vanilla essence.
- Stir into batter.
- Spoon into a large greased ring cake pan or two greased cake pans.
- Bake for 25-30 minutes.
- Allow to cool.
- In the meantime, mix butter and cream cheese, add granadilla pulp.
- Add icing and mix well until smooth.
- Pour granadilla topping over cake or use as icing in between layers and on top.
