Vanilla Ice Cream

Serves 6

Ingredients

1 tin (380 g) Low Fat Evaporated Milk, chilled well
250 g (1 tub) Fat Free Cottage Cheese
125 ml (85 g) SUGAlite
5 ml (1 tsp) Vanilla Essence

Method

  1. Beat the evaporated milk with the beater on full speed until it is fluffy. Add the cottage cheese and continue beating.
  2. Slowly add the SUGAlite, beating all the time, and then beat in the vanilla essence. The mixture should be fluffy and firm.
  3. Pour into an ice cream container, place in the coldest place in the refrigerator and freeze overnight.
