Yoghurt Cake



Ingredients

175 ml apricot yoghurt
175 ml oil
150 g SUGAlite
3 extra large eggs
3 x 175 ml self-raising flour
2 ml salt

Hint: 1 yoghurt cup measures 175 ml

Topping (Optional)
50 g butter
50 g pecan nuts, chopped
50 g dried apricots, chopped


Method

  1. Preheat oven to 160ºC.
  2. Mix all the ingredients together in a bowl.
  3. Beat well for 3 minutes with an electric beater or 6 minutes with a hand beater.
  4. Spoon mixture into a greased 23 cm ring pan.
  5. Bake for 1 hour.
  6. Remove cake from pan and allow to cool completely.

Topping:
  1. Melt butter in sauce pan.
  2. Add the nuts and apricots.
  3. Fry for 5 minutes.
  4. Spoon onto cake.
