Thirst quenchers

Zesty Lemonade


Ingredients

4 Lemons or enough to give 250 ml (1 cup) juice
375 ml (1 ½ cups) Huletts White Sugar
250 ml (1 cup) Water
Cold Water OR Soda Water
Ice Cubes
Mint Leaves

Method

  1. Wash the lemons and grate the rind from 1 lemon. Squeeze the juice from the lemons to give 250 ml. Strain.
  2. Mix the grated peel, sugar and water in a saucepan and heat slowly, stirring to dissolve the sugar. Bring to the boil, then reduce the heat and simmer for 5 minutes. The sugar must be dissolved before the mixture boils. Leave to cool.
  3. Add the lemon juice. Pour into a container and refrigerate till required (up to 2 weeks).
  4. To serve, stir the syrup and use 1 part to 2 parts cold water or soda water. Add ice cubes and mint leaves.
